Not bad but also not very memorable. It was a little bland, I added some salt and definitely needs all the sauce. lots of beets which is fine but wish more of cucumbers would have been in it.

I love the flavor combination, the beets give the plain rice a nice sweetness and then the sauce brings brightness and acidity. The zucchini doesn't add anything really to the meal. Maybe something else could be exchanged for it
