Soup's up! This delicious udon noodle soup bowl will warm your belly and heart. Just add hot water to the concentrated dashi broth with thick wheat udon noodles. Topped with a healthy medley of sautéed vegetables such as zucchini, carrots and charred scallions, as well as garlic roasted shrimp and puffed tofu for that extra protein.
Loved this soup! I made it exactly as instructed and it was delicious. The shrimp were perfectly cooked, the veggies crisp, the noodles firm, and the broth was rich, savory, and full of umami.

Noodles. Maybe I got the batch was cooked a tad bit too long. Once microwaved, the noodles immediately mushed whenever I took a bite. Flavors are subtle and enjoyable
