Peruvian Chicken Causa

A chilled classic from Lima’s coast: zesty mashed potatoes laced with aji amarillo and lime, layered with creamy chicken salad and pops of sweet cherry tomato and boiled egg. A scatter of fried quinoa on top brings the texture that makes this dish sing.
