A take on tteok-galbi, once a royal Korean dish, these meatballs are made with ground beef marinated in soy, garlic, mirin, and pineapple juice. Baked, then finished on the grill for a smoky char, they’re juicy, savory, and lightly sweet. Alongside steamed white rice, roasted broccoli and bell peppers, finished with a scatter of sesame seeds.
