Chef Andres is serving up a little taste of Louisiana! Perfectly baked Swai fish—a type of catfish—is tender and flaky in the center, but has a nice crisp finish thanks to a crust of Cajun spices. Served with a buttery Cajun pan sauce that adds richness, the dish is made complete by garlicky kale (standing in for the traditional collard greens), as well as sautéed zucchini and bell peppers. This dish proves you can have nutritious, well-balanced meals without sacrificing on flavor.

Kale was very chewy

The fish was minuscule, but tasted delicious. Something else is horrible, the zucchini referenced was a few cubes of garnish. Plz double the fish portion and replace kale with something. Almost great.

Did not know what Swai was. It is a Vietnamese catfish. I would not have ordered it.
