Persian Herbed Frittata

Call it brunch, lunch, or breakfast for dinner, Chef Einat’s Persian-inspired frittata is both comforting and full of character. Sweet potatoes, spinach, scallions, and a trio of fresh herbs are folded into spiced eggs, then baked until tender and fragrant. It’s paired with golden-roasted Yukon potatoes and a refreshing labneh sauce brightened with dill, garlic, and black pepper. The result is a soulful twist on tradition that brings a taste of the Middle East to your table.
