Charring scallions softens them up and brings out their natural sweetness, which adds depth to the rich, allium-forward compound butter. Chef Chris loves creamy French lentils cooked with garlic, thyme and mirepoix, and finds they pairs exceptionally well with a delicate protein like Branzino.
