One of Chef Maribel's favorite weekday meals, this dish is comfort on a plate featuring lean pork stewed with a bright tomatillo sauce and a small kick of serrano spice, and served with rice. If you love Chef Maribel's tomatillo enchiladas, this version of her tomatillo sauce is enhanced with the pork and paired with calabacitas, or Mexican squash, and corn.
The pork was tender and flavorful, and the Mexican squash (not zucchini) was lovely in this stew served over rice. I'll definitely get it again. The tomatillo flavor was light and not salsa-ish.

Wow, this dish was so comforting. Which came as a surprise to me. I try to stay away from the dishes, classified as stew. Nevertheless, I thoroughly enjoyed this meal.

The tomatillo sauce is delicious but the pork was blah, despite being soaked in the sauce.

It’s either the portion is too small or the pork is all fat. Often it’s both.

This is called pork stew. It should have been squash stew. I literally had only 2 pieces of pork but a lot of squash.
