Chef Chris wanted to come up with a healthier alternative to the deep-fried eggplant you typically see on Italian menus, but without sacrificing any of the flavor. He decided on simply roasted thin slices of seasoned eggplant, layered Napoleon-style with hand-sliced fresh mozzarella, and served with fresh roasted tomato sauce.

I never had un breaded eggplant parm. it was tasty! tasted just as good as with breading but without it lol

The sauce was a little on the sweet side. Would be better if it had been peeled.

This meal tasted delicious. Would prefer it with only half the amount to allow addition of a fish and another vegetable to make a completely wholesome lunch or dinner. Like being roasted so healhier.
