Smoky, sweet, and savory, the chipotle-maple glaze on this tender salmon filet is the real star of this dish. It takes the buttery fish from good to great, especially when paired with Chef Ruben's mango pico de gallo and a side of fresh, lemony green beans. The bold, tangy flavors in this dish make it much more fun and exciting to eat than your average "health food", yet it's still full of nutrition. This meal is ideal for a light lunch or a protein-packed dinner after an intense workout.

Everything was top notch. The green beans were al dente and the salmon was fresh and didn't taste fishy like I was afraid it would. I love sweet and savory sauces with my proteins.
