Lemon Chicken Bowl

Lemon zest and Spanish spices form a fragrant rub for chicken breast, which roasts until the outside takes on a golden bronze and the inside stays tender. It’s served over nutty farro tossed with herb oil, alongside golden zucchini, blistered cherry tomatoes, and crisp snap peas. A bright lemon dressing (made from Chef Sandra’s secret recipe) adds a final lift of citrus. Great warm or cold, this bowl plays well in any season.
