Chef Andres is serving up a little taste of Louisiana! Perfectly baked Swai fish—a type of catfish—is tender and flaky in the center, but has a nice crisp finish thanks to a crust of Cajun spices. Served with a buttery Cajun pan sauce that adds richness, the dish is made complete by garlicky kale (standing in for the traditional collard greens), as well as sautéed zucchini and bell peppers. This dish proves you can have nutritious, well-balanced meals without sacrificing on flavor.

Great flavor, especially from the Cajun pan sauce! Give us more! However, I must say everything about this meal was flavorful… loved the kale!

The flavors were good, but the texture of the fish did not hold up. It was soft and mushy in spots and unappetizing.

Love Swai! This is bland with some heat. No real flavor. CU can't cook greens...always bitter and too much!

Loved the kale, the sauce, the fish. This may be one of my new favorites, which I feel like I say almost every day. But it is super tasty.

I liked this way more than I expected. Fish was nice and meaty and delicious

I’m not a kale eater but this was good and seasoned well. The cut of the peppers and zucchini I did not like because it made them a bit too soft for me. The sauce was really good.

I've never had Swai before. Not a fan. I will never have Swai again.
