Said to have been invented in a Mazatlán restaurant to charm a seafood-loving governor, this dish lands somewhere between taco and quesadilla: sautéed shrimp with sweet onion and roasted peppers, held together by molten mozzarella, then folded into corn tortillas and griddled until golden. On the side, two salsas that work in tandem—a smoky, tatemada-style tomato and chipotle number, and a cooling green blend of avocado, tomatillo, lime, and jalapeño.

Already assembled, so mushy tortillas after heating (directly contradicting instructions). Meat very fatty and gamey tasting. Not great.
