Hello summer! This cooling salmon dish hits all the notes: The slow-poached salmon is meltingly tender, the tomato-basil pearl couscous adds herbal notes, while the citrusy punch of the pickled onions brings it all together. The best part? No need to heat up!

The fish and couscous were cooked perfectly Couscous was delicious, but the fish needed more flavor. Maybe add the crunch of cucumber? Needed texture. Great no cook dish.

Pearl couscous was amazing, want more. Salmon was ok, needed a bit more seasoning. Surprised listed to eat cold, thought the cold poached was a way of cooking, we heated a min just to warm couscous.

This was lovely! The salmon was perfectly cooked, and the pickled onions were delightful (wish there were more of them, personally).
