Looking for a healthy option that still promises bright, bold flavors? Look no further. Tender chicken breast roasted with garlic and herbs is cooked to juicy perfection, then served atop a Latin American-inspired tricolor quinoa salad with black beans, corn, cucumber, and plum tomato. To bring together all the elements in harmony, Chef Andres pairs the chicken and quinoa with a creamy, refreshing sauce made with cucumber, cilantro, lime juice, and olive oil. This colorful meal is just as delicious as it is nutritious, making it a perfect choice for any season.

Pretty good, combination of ingredients went together better than I thought. I wasn’t too sure about the sauce so I used it sparingly. I added some guacamole.

I don't really care for the sauce. Tastes cilantro heavy

The blandest meal yet. Chicken and quinoa have good texture, but no flavor. Sauce needs body, seasoning, punch.
