It’s just what you want in a salmon dish: a skin-on fillet pan-seared until crispy and golden. Chef Andres completes the meal with crunchy, garlicky green beans and basmati rice cooked in coconut milk. Top it all off with a passionfruit white wine sauce for an extra memorable meal.

Fair. Salmon overcooked. Sauce rather thin and sweet.

was not crispy...just dry

no skin ... hard sear of the salmon flesh left the portion very dry. passion fruit sauce was wonderful. Green beans still had stems. would try other dishes by this chef but would not get 'crispy skin'
