Spiced, smoked, and slowly cooked, beef brisket shines in this one-bowl wonder, stacked with cilantro rice, refried beans, and baby spinach. Served with salsa verde cruda—a fresh blend of tomatillo and jalapeno—and topped with pepperjack cheese, this dish brings Texas and Mexico in flavor form.

I liked the green rice at first, but must be getting sick of it. Still good meal but wish we had a different rice.

I’d love some bell pepper or onion strips in this. It’s very heavy on protein and rice, but it needs some vegetables too
