Chef Andres is serving up a little taste of Louisiana! Perfectly baked Swai fish—a type of catfish—is tender and flaky in the center, but has a nice crisp finish thanks to a crust of Cajun spices. Served with a buttery Cajun pan sauce that adds richness, the dish is made complete by garlicky kale (standing in for the traditional collard greens), as well as sautéed zucchini and bell peppers. This dish proves you can have nutritious, well-balanced meals without sacrificing on flavor.

The fish was slimy to me. It was cooked well but even with the sauce it was still not good.

This wasn't my favorite. The fish was fresh but kind of slick/slimy. The sauce seemed a bit oily as well.
