Meaty maitake mushrooms are simply roasted with shallots, garlic, and white wine, then layered over herb-studded green orzo tossed with roasted fennel, zucchini, and cherry tomatoes. The sharp pecorino and drizzle of truffle oil bring richness and edge to an otherwise light, delicate pasta.
