Mike Ding has over a decade of fine dining experience with a specialization in French and Asian cuisine. A graduate of Le Cordon Bleu, Mike's culinary journey began with training in global cuisines, butchery, and seasonal cuisine. His career includes pivotal roles at prestigious establishments such as Jean-Georges, Picholine, Forgione, Cut by Wolfgang Puck, and Masa.
Mike has been the Chef Owner of Mori NYC since 2019 and the CPO/Owner of Asian Veggies Inc. since 2021. At Asian Veggies Inc., he focuses on sourcing specialty fruits and vegetables while managing imports from Canada, Mexico, and Asia. He places consistent emphasis on incorporating fresh, seasonal ingredients into his dishes and is adept at collaborating directly with farmers and purveyors to ensure the highest quality produce for his menus.

Char Siu Chinese BBQ Pork Rice Bowl
Im pretty sure I got more pork than rice in this one and I ain’t complaining! Also having the char siu sauce on the side is genius, it doesn’t mess up the consistency of the rice after you’ve microwaved it. The pork used was so tender, it was just the right amount of fat vs. meat. This I would definitely order many times again.

Chilled Shrimp Zaru Soba Noodles
They spare no expenses on the shrimp here… these were MASSIVE shrimps. I wanted a light meal after a sweaty workout and this hit the spot perfectly. Meant to be eaten chilled, this was such a refreshing dish that cooled me back down.

Crispy Kung Pao Sesame Tofu Rice Bowl
I’ve never seen tofu’s this massive in my life. I’m not usually a vegetarian/vegan, I wanted to try this option just to try. I would definitely order this again because of how much tofu you get in this order.

Crispy Swai Fish Katsu Curry Udon
This is a MUST try. You are hit with 3 massive slabs of fish and udon underneath. This was more ‘protein’ heavy than carbs which I love. Don’t get me wrong, the udon was also very good, but who doesn’t prefer more protein.
