All of the components in this dish are delicious on their own, but the real magic is how they come together in perfect harmony. Crispy on the outside, yet juicy on the inside, perfectly grilled pork chops find their match in an herbaceous parsley-and-bacon gremolata (an Italian herb sauce similar to chimichurri). Chef James adds thick roasted sweet potato on the side, plus a sweet-and-savory honey mustard sauce to tie everything together.
