Enjoy Chef Andres' modern take on a traditional Mexican dish from the Yucatán state. The star of the dish is the Cochinita Pibil, pork that's slow cooked with lots of spices for 12 hours of cooking in plantain leaves to create an indescribably delicious flavor. The pork is served up 'bowl' style, on a bed of cilantro farro with baby spinach and black beans. Topped off with queso fresco, pickled onions, and a creamy avocado crema, you'll be hooked after one bite.
