Seared Salmon & Crispy Rice

This dish from Chef Cat is a straight-up masterpiece. Sushi rice is pressed and fried until golden, then topped with seared salmon marinated in soy, sesame, and mirin. Edamame adds bright pops of green, while a firecracker sauce—made with Kewpie (arguably the best mayo there is), sriracha, and lime—brings creamy heat with a citrusy kick. Jalapeño slices and a fresh lime wedge finish it off, leaving a bright, zesty spark that dances across the palate.
