Thai Pork Meatballs (Laab Tod)

Chef Sand reimagines Thai laab with a texture-forward twist. Ground pork is mixed with lime juice, fish sauce, chili, and smoky roasted rice, then shaped into golden, bite-sized morsels and fried. They’re served with soft jasmine rice, cooling slices of cucumber, and fresh romaine leaves. Mix into a salad, or bundle into wraps if you're in a DIY mood.
