Chef Sand’s housemade red curry paste is at the heart of this restorative dish, made from a warming blend of spices, including galangal, lemongrass, and makrut lime. Simmered in creamy coconut milk, it’s layered with gently boiled eggplant, bamboo shoots, and chunks of protein-rich tofu, then served with a bundle of jasmine rice. A final garnish of Thai basil and fresh chili adds a fragrant lift to finish.

The eggplant was undercooked, but the tofu and curry sauce was very tasty. It reheated well.

With a passion to share Thai culture through her food, she could often be found serving up Thai BBQ or her signature freshly blended curries at food festivals across Toronto.These signature dishes and fresh authentic flavors are unique in Toronto's food scene, leading to opportunities to showcase her food at TIFF, American Express Platinum dining events and collaborations across the city. She was the winner of the 2023 Resident Chef by Cookin award, an innovative platform for food entrepreneurs to share their meals in their local communities.In Thai culture, showing care often involves asking if a person has eaten yet, much like how Western culture asks, "How are you doing?"
