1. Preparation
Cook the jasmine rice according to package instructions. Set aside to cool. Dice the chicken breast into small, bite-sized pieces. Finely chop the green onion and garlic. Measure out the frozen peas, oyster sauce, white pepper, Shaoxing wine, light soy sauce, sesame oil, liquid whole eggs, water, and mirepoix.
2. Cooking
Heat a large skillet or wok over medium-high heat. Add half of the blended oil. Add the diced chicken breast and cook until fully cooked and lightly browned. Remove from the skillet and set aside. In the same skillet, add the remaining blended oil. Add the garlic and sauté until fragrant. Add the mirepoix and cook until softened. Push the vegetables to one side of the skillet and pour in the liquid whole eggs. Scramble the eggs until fully cooked, then mix with the vegetables. Add the cooked jasmine rice, frozen peas, and cooked chicken back into the skillet. Stir to combine. Pour in the oyster sauce, Shaoxing wine, light soy sauce, and sesame oil. Sprinkle with ground white pepper and kosher salt. Stir everything together until evenly coated and heated through.
3. Finishing Touches
