About
Brothers Gustavo and Maximiliano Vertone bring more than four decades of combined culinary experience to Miami. Born and raised in Argentina, both were immersed in food culture from an early age, shaping careers that span Miami, Europe, and leading hospitality concepts.
Gustavo, a graduate of the Gato Dumas Institute in Buenos Aires, built his foundation at Nobu and as part of the opening team at Scarpetta at Fontainebleau before leading acclaimed venues including Baoli Miami, Marion, and El Tucan. Known for blending Asian, Latin, and European influences, with a focus on seasonal ingredients and elevated coastal flavors.
Maximiliano’s background includes key roles at Sushi Samba and Nobu Miami, followed by executive leadership positions within the Mr Hospitality group, where he developed innovative menus and led large kitchen teams.
