Preparation

1. Prepare the Roasted Cuban Pork

Preheat your oven to 325°F (165°C). In a bowl, mix the lime juice, garlic, black pepper, oregano, cumin, and kosher salt. Rub this mixture all over the pork shoulder. Place the pork in a roasting pan and cover with aluminum foil. Roast for 45-55 minutes, or until the pork reaches an internal temperature of 145°F (63°C). Once cooked, let the pork rest for 10 minutes before slicing thinly.

2. Make the Mustard Aioli

In a small bowl, combine the yellow mustard, mayonnaise, garlic, unsalted butter, kosher salt, and green onion. Stir until smooth and set aside.

3. Assemble the Classic Cuban Sandwich

Slice the Cuban bread in half horizontally. Spread the mustard aioli evenly on both halves of the bread. Layer the smoked ham, roasted Cuban pork, Swiss cheese, and pickles on the bottom half of the bread. Close the sandwich with the top half of the bread. Press the sandwich gently to ensure even cooking.

4. Cook the Sandwich

Heat a panini press or a skillet over medium heat. Cook the sandwich for 3-5 minutes on each side, or until the bread is crispy and the cheese has melted.
