For his healthier take on felafel, Chef Ludo bakes patties of perfectly spiced ground chickpeas instead of frying them. The ingenious result has the same crunch you crave—without the added calories you don’t. They’re served with sofa pita bread, a refreshing tomato-cucumber salad, crunchy shredded cabbage for added texture, and spicy, creamy harissa sauce… ready for you to assemble however you please.
