This is a unique take on a classic, made specifically for CookUnity. Chile rellenos is a classic Mexican dish. I wanted to put a fun, seasonal twist on it by using butternut squash. I've been cooking a lot of plant based foods lately. Normally this is filled with beef or pork, but I thought it was important to have a plant-based take on a classic. This is a nicely balanced, healthy dish, with a spicy, tomato based sauce, filled with a savory filling accompanied by black beans and rice for a fully satisfying meal. The special ingredient is butternut squash and roasted poblano chile. The poblano chile is the vessel that encapsulates all of the delicious elements of the filling. The squash is seasonal with natural sweetness that balances the other Mexican flavors.

LOVE this dish - definitely tastes better if you eat it a few days before the "enjoy before" date. We noticed that when we eat it on the last day, it's not as fresh tasting.
