A classic French salad originating from the city of Nice. Chef Ludo's version stays true to tradition, with lots of fresh veggies and high-quality tuna that has been cured in olive oil. A bed of mixed greens is topped with carefully arranged green beans, cherry tomatoes, Kalamata olives, radishes, and hard-boiled eggs. A classic vinaigrette brings the whole salad together, making it the ideal hearty lunch or light dinner.

He has also been named one of the 50 Greatest Chefs in the World by Relais & Châteaux, and was a James Beard finalist for Rising Star Chef, as well as Petit Trois receiving a finalist nomination for Best New Restaurant. Ludo has been nominated for two James Beard Awards in 2017, Best Chef West and for his work on Mind of A Chef. He is the author of two cookbooks, LudoBites: Recipes and Stories from the Pop-Up Restaurants of Ludo Lefebvre and Crave: The Feast of the Five Senses, which sold out and has been re-released as a 10th anniversary limited edition.
This is one of my favorite meals, and I appreciate that this last week or two, the onions were gone. I used to have to take them off. It is now more classically french.

I don't usually like salad Nicoise, but I liked this version. All the ingredients had a great taste. I didn't eat mine right away, but the freshness was still good. I'll be ordering again.
