Here Chef uses fresh salmon, hand-chopped and mixed with a minimal amount of Panko for binding, then flavored with fresh ginger, garlic, green onion and herbs. The cakes are seared to perfection and sit on top of a lightly seasoned trio of chopped cabbage, cilantro and green onion with a side of sushi rice.
