This dish is my Gluten Free dairy-free, vegetable-forward twist on pesto pasta. Each serving contains a whole serving of roasted kale blended into a tangy, garlicky pesto with almonds, lemon, and basil, which is tossed with gluten free pasta and topped with juicy roasted cherry tomatoes and mushrooms. A delicious way to sneak in some extra fiber and nutrients!

Very substantial portion, the texture of the mushrooms against the pasta works as well as the acidity of the tomato.

Delicious! I am not an expert, but, in my opinion, perfect execution of each component in the dish. I just wish the sodium content was lower so I could enjoy it more often. My husband liked this meal too. Thank you.
