The most special ingredient in this dish is the slow-braised beef which is cooked with red wine, spices, mushrooms, and English peas. While this dish is typically served with mashed potatoes, I make it with a combination of celery root and Yukon gold potatoes to add a natural sweetness. It's a classic comfort food that my mom, Magdalena, served to me when I was growing up.

I always order this! i’m not sure if putting the asparagus in with the short rib instead of the potatoes is the way to go, but it seems to work! There are more potatoes pictured in the photo than there are than I’ve been getting…
