Preparation

1. Barbeque Grilled Heritage Pork Chop

Season the pork chops with kosher salt and ground black pepper on both sides. Preheat the grill to medium-high heat. Place the pork chops on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Brush the pork chops with BBQ sauce during the last 2 minutes of grilling, turning occasionally to coat evenly. Remove from the grill and let the pork chops rest for a few minutes before serving.

2. Dijonnaise Potato Salad

Peel and dice the Yukon potatoes into bite-sized pieces. Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool. In a large bowl, combine mayonnaise, Dijon mustard, lemon juice, crème fraîche, kosher salt, and ground black pepper. Add the cooled potatoes and diced red onion to the dressing. Mix until well combined. Refrigerate for at least 30 minutes before serving to allow the flavors to meld. Sauteed Garlicky String Beans

3. Sauteed Garlicky String Beans

Trim and clean the green beans. Mince the peeled garlic and shallot. In a large skillet, heat some oil over medium-high heat. Add the minced shallot and garlic, and sauté until fragrant, about 1-2 minutes. Add the green beans and continue to sauté until tender but still crisp, about 5-7 minutes. Season with kosher salt and ground black pepper to taste.

4. Assemble the Dish

Place the BBQ pork chop on a plate. Add a generous serving of Dijonnaise Potato Salad next to the pork chop. Arrange the Sauteed Garlicky String Beans alongside the pork chop and potato salad. Garnish with sliced green onions before serving.
