The luscious salmon burger is a thing of beauty. Chef John plates a perfectly cooked, moist 6-oz salmon patty flavored with dill, garlic, red and yellow peppers on a plush potato bun with gem lettuce, tomato, red onion, and Sriracha aioli. Paired with a side of crunchy, crispy tater tots on the side, this is the ideal spring or summer dinner.

Preparation

1. Prepare the Salmon Patties

In a large bowl, combine the chopped red onion, panko breadcrumbs, sweet paprika, garlic salt, yellow bell pepper, beaten egg, fresh dill, and chopped salmon. Mix until well combined. Form the mixture into patties and refrigerate for 15 minutes to help them hold their shape.

2. Cook the Salmon Patties

Heat a skillet over medium heat and add a small amount of canola oil. Cook the salmon patties for 4-5 minutes on each side until golden brown and cooked through.

3. Make the Sriracha Aioli

In a small bowl, mix together the mayonnaise and sriracha sauce until smooth. Set aside.

4. Prepare the Curly Fries

Preheat the oven according to the instructions on the package of curly fries. Spread the frozen curly fries on a baking sheet and drizzle with canola oil. Sprinkle with kosher salt. Bake according to package instructions until crispy and golden.

5. Assemble the Burger

Toast the potato bun in a skillet until lightly browned. Spread a generous amount of sriracha aioli on the bottom bun. Layer with little gem lettuce, a salmon patty, sliced red onion, and plum tomato slices. Top with the other half of the bun.

6. Serve

Plate the salmon burger with a side of crispy curly fries and an extra dollop of sriracha aioli for dipping.
