Preparation

1. Prepare the Lobster Filling

In a mixing bowl, combine the chopped lobster meat, mayonnaise, diced celery, lemon juice, salt, and pepper. Gently fold everything together until well combined. Adjust seasoning to taste.

2. Prepare the Rolls

Brush the inside of each hot dog roll with melted butter. Heat a large skillet or griddle over medium heat. Toast the rolls on the skillet, buttered side down, until golden brown and crispy, about 2-3 minutes per side. Remove from heat.

3. Assemble the Lobster Rolls

Evenly distribute the lobster filling into the toasted rolls. Optionally, sprinkle chopped chives or parsley on top for added flavor and presentation.

4. Serve and Enjoy

Arrange the Maine Lobster Rolls on a platter and serve immediately. Pair with potato chips, coleslaw, or a crisp salad for a complete meal.

Crispy Salmon Tacos

Take your Taco Tuesday up a serious notch with this delicious dish. Crispy panko-crusted salmon fillets are crunchy on the outside, yet soft and juicy on the inside and full of flavor in every bite. The salmon is tucked into flour tortillas and topped with pico de gallo and Chef Ruben's signature habanero-passionfruit sauce for a fruit kick of heat. Paired with a light coleslaw, these fish tacos will transport you to a beach, so matter where you enjoy them.

Ponzu Baked Swai Fish

In this Japanese-inspired dish, light and flaky swai—a mild white fish similar to tilapia—is baked to perfection and served with roasted shiitake mushrooms and stir-fried bok choy. A citrusy ponzu sauce brings this whole dish together in sweet and savory harmony. Enjoy another healthy yet satisfying offering from Chef Akhtar.
