Preparation

1. For the Burger Patty

Season the ground beef with salt and black pepper. Form into patties. Preheat the grill or skillet to medium-high heat. Cook the patties for 4-5 minutes per side or until desired doneness is reached. Top each patty with a slice of American cheese during the last minute of cooking to melt.

2. For the Special Burger Sauce

In a bowl, combine mayonnaise, ketchup, sriracha, pickled cucumber, and water. Mix until smooth.

3. For the Caramelized Onions

Heat oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 15 minutes). Stir in salt and sugar, and cook for an additional 2 minutes.

4. For the Burger Assembly

Toast the potato burger bun if desired. Spread the special sauce on the bottom half of the bun. Place the cooked patty on top of the sauce. Add caramelized onions, lettuce, and tomato slices. Close the burger with the top bun.

5. For the Curly Fries

Preheat the oven according to package instructions for the curly fries. Spread the frozen fries on a baking sheet, drizzle with canola oil, and bake as per the package instructions until crispy.

Salmon Burger with Sriracha Aioli

The luscious salmon burger is a thing of beauty. Chef John plates a perfectly cooked, moist 6-oz salmon patty flavored with dill, garlic, red and yellow peppers on a plush potato bun with gem lettuce, tomato, red onion, and Sriracha aioli. Paired with a side of crunchy, crispy tater tots on the side, this is the ideal spring or summer dinner.

BBQ Heritage Pork Chop

The main attraction here is a stunning bone-in heritage pork chop. The pork chop gets grilled to seal in all its natural juices, then basted in sweet and smoky BBQ sauce. Accompanied by classic Yukon Gold potato salad with a Dijon mustard-based dressing, and garlicky sautéed string beans.
