He has worked for many fine establishments as well as run successful pop-up resturants around New York. He enjoys studying the nuances of Italain and world cuisines which he enjoys sharing with every dish he creates.
One of CU's best vegetarian meals. SO MUCH FLAVOR, not too many calories. Very filling. I am disappointed I cannot have this every week.

The dish itself was all one color. No dark rice in wild rice needed some color however it was delish!

The cauliflower was great but the rice was lacking flavor.

This tasted good, BUT, the cauliflower was cut into individual florets, was not a steak cut as described. I had white rice, not wild rice, I didnt see or taste any parsley or mint, and I had one piece of cashew in my entire dish. Although tasty, I think the sauce had tarragon in it but it wasnt mentioned in the ingredients. Overall this dish wasnt presented as described but it was tasty, so I would order again.

I liked the cauliflower, but there was no wild rice or sauce included in mine, so it was plain rice and some cauliflower with a tahini-like sauce. Bland and boring and no texture.
