This absolutely loaded pita wrap is packed full of juicy, marinated and grilled chicken thighs, handmade herby tzatziki, fresh red onions, grape tomatoes, and shredded cabbage. Preparation

1. Greek-Style Chicken Gyro Pita Wrap

Thinly slice the red onion and plum tomato. Shred the green cabbage finely.

2. Handmade Tzatziki Sauce

Grate the English cucumber and squeeze out the excess moisture using a clean cloth or paper towel. In a bowl, combine the grated cucumber, Greek yogurt, lemon juice, dried oregano, minced garlic, chopped mint, and a pinch of kosher salt. Stir well until all ingredients are evenly incorporated. Cover the tzatziki sauce and refrigerate to allow the flavors to meld until ready to serve.

3. Greek-Style Chicken

In a mixing bowl, combine the boneless, skinless chicken thighs with ground black pepper, dried oregano, ground cumin, sweet paprika, kosher salt, dried thyme, and onion powder. Drizzle the canola oil over the chicken and toss to coat evenly with the spices. Let the chicken marinate for at least 20 minutes. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes on each side, or until fully cooked and slightly charred. Remove from heat, let it rest for a few minutes, then slice the chicken into strips. Warm the pita bread slightly on the grill or in a pan. Spread a generous amount of the handmade tzatziki sauce onto each pita. Layer the sliced chicken, red onion, tomato, and shredded cabbage on top. Fold the pita around the filling to create a wrap.
