Preparation

1. Preparation

Dice the yellow onion and finely chop the garlic and basil. Season the chicken breast with half of the kosher salt and ground black pepper. Halve the cherry tomatoes and set aside.

2. Cooking the Chicken

Heat a skillet over medium-high heat and add the blended oil. Cook the chicken breast until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.

3. Making the Tuscan Butter Sauce

In the same skillet, add the unsalted butter and melt over medium heat. Add the diced onion and cook until softened. Stir in the garlic and cook until fragrant. Add the cherry tomatoes and spinach, cooking until the spinach is wilted. Pour in the heavy cream, stirring to combine. Season with the remaining kosher salt. Return the cooked chicken to the skillet, spooning the sauce over the top. Sprinkle with shredded Parmesan cheese.

4. Cooking the Broccolini

Heat a separate pan over medium heat and add the blended oil. Add the garlic and cook until fragrant. Add the broccolini and cook until tender, about 5-7 minutes. Season with kosher salt and fresh basil.

5. Finishing Touches

Serve the Tuscan Butter Chicken hot, with the garlic basil broccolini on the side. Enjoy your flavorful and comforting meal!
